A wonderful way to treat the mothers in your life would be to have them over for a beautiful lunch. If it were Father’s day, go for a big beef roast or BBQ ribs perhaps, but for mum something elegant and refined. To show her how much you’ve finally grown up of course!
Start with champagne. Then, the first course: Prawn cocktail.* This simple classic is served in a grilled avocado which adds a modern touch. It can be prepared in advance which allows for stress-free catching up. Luckily the glass of champagne will kick in right as she makes the first passive dig, so you won’t care!
The main course: Crispy skin salmon with ricotta, sun-dried tomatoes and seeds *. This has all the right texture and flavour combinations. It feels rich and luxurious yet not too guilty. Served with roasted long-stem broccoli and parmesan roasted new potatoes, which require hardly any effort except putting them in the oven.
To finish off, lovely lemon posset pots with lemon shortbread fingers for dipping. These can both be made in advance. The lemon posset is so delicious, and just involves mixing cream, sugar and lemon juice together and letting it set in the fridge. Who wouldn’t love their own little pot of lemony goo for dessert, with little shortbread dippers as well? The addition of lemon in both disguise the fact you are pretty much having pure cream, butter and sugar. But don’t even think about that – they are small, and it’s a special occasion!
*not a fan of fish? Fill the avocados with a simple corn salad (fresh corn kernels, chopped red capsicum, yoghurt and lime juice) instead. Try this succulent stuffed chicken wrapped in prosciutto for the main course.
