I made this the night before we went on holiday. We had lots of tomatoes that were just going to be thrown away, and I can’t stand to waste perfectly good food. Especially as I knew they could be made into something delicious! This might sound crazy to be making jam at 8pm the night before a holiday, but these things are easier than they seem! It only took 30 minutes. I was very happy I decided to make this on a whim, as the night we came back we had an easy throw together dinner of cheese, olives, crackers and this jam. The flavours had even developed over the two weeks we were away. The jam was delicious, and I felt rather proud!
This can be used in numerous ways: in cooking for adding a sweet note, on sandwiches, as a condiment, or perhaps is the best just as it is, alongside some great cheese. Because of the ginger and garlic, it goes especially well with Asian dishes: add a touch into a rich curry or try it in this Super greens stir-fry recipe.
I resisted adding chili because I knew my kids would be eating this. I often do that and just add some heat afterwards on my own plate if I’m craving that.
