These Simply Roasted Garlic Shrimp are shockingly easy. You’ve gotta love a dish that can be on the table in 15 minutes.
Up to you whether you buy the raw shrimp whole in their shells or already de-shelled and veined. Obviously having them pre-cleaned makes the preparation so much quicker and less messy, but the downside is that you might pay a little bit more for them already prepared. But regardless, once the shrimp are cleaned and de-shelled, all you need to do is throw them in the roasting tray and cover with the marinade. Shellfish can take a lot of garlic, so don’t be afraid!
The other thing I love about this garlic shrimp recipe is that it is so versatile. It would equally go as well with a fabulous Spanish tapas spread with chorizo and croquettes as it would along side this Super Greens Stirfry for a quick and easy Asian dinner.
I think its nice to have an Asian meal with different components. Usually when stir-frying we tend to usually prepare everything together in the wok, but this makes a nice change to have the shrimp on the side. Gives you more choice and texture when eating, and looks and feels more appealing. This is so easy that it doesn’t require any more effort to do so – the shrimp just cook in the oven as you prepare the other components.
Purists might question the authenticity of using olive oil if this were to be served along side a stir-fry. But, I don’t think that should be an issue. There is half a cup, which is a fair amount of oil. It makes the prawns soft and just works so well with the dish. Olive oil just seems a healthier option. I will add that I do think this dish should have some heat. As I’m always mindful of cooking for kids, in our house we tend to omit chili and add it at the end to our individual plates. If you like hot food, substitute the red bell pepper for a chili pepper. Or like us, serve with tabasco, sriacha or chili flakes at the end for individual preference.
