This little vegetable side salad recipe is so tasty! Crisp and crunchy shreds of multi-coloured carrots, cucumber, red onion and cherry tomatoes look so pretty on the plate and taste so fresh and vibrant with a lip-smacking honey lime dressing that is oil free and could not be simpler to make up.
My husband and I are aiming to cut back on meat. I don’t want to say “vegetarian” as that sounds too official and committal, but more so we just want to try out eating *mainly* plant-based for our health benefits and for the environment. Recently having watched “What the Health” on Netflix, we were pretty freaked out by what was said about the mass production of meat and dairy and its impact, so that sealed the deal. We actually want to see if we feel better for it, too so are starting off with a little two week experiment to see if we feel better. I’m thrilled that my husband, a typical meat eater is up for this!
So I’m looking to get as much fresh, colourful vegetable dishes into us as I can. This is like a whole new way of cooking for me, so I’m excited by the challenge! Having recently lost some weight by reducing carbs, I also am aiming to keep away from the starchy carbs such as potato and grains. Is this going to be possible to do meat free AND low carb? I think it is, but the key is going to be lots of variety. And if you haven’t noticed, kids LOVE carbs. Of course, I don’t want to impose my diet restrictions on to them, so I will always offer some alternatives for them, such as rice, pasta or bread. (I will make only enough for the kids and husband, so I’m not even tempted.) Check out these Coconut oil flatbreads – loved in our house!
The dressing for this vibrant salad is really zingy and delicious and only has 3 ingredients. Not even any oil is required. Anybody can make this!
This salad would be a nice edition to these Black Beans, Veggies and Rice, or in a healthy bowl like this Sweet Potato Falafel Bowl or alongside a nice piece of fish, like this 10 Minute Mackerel with Fresh Tomato Jam We had ours (before the veggie kick!) along side these delicious Turmeric Turkey Burgers. Here is your Vegetable Side Salad recipe:
- 2-3 multi coloured carrots
- 1 red onion
- 1 long cucumber
- handful cherry tomatoes
- 1 teaspoon sunflower seeds
- 1 Tbsp honey
- zest and juice of 1 lime
- salt and pepper
- Slice the red onion very thinly and place in a salad bowl.
- Using a vegetable shredder or peeler, make long strips along the sides of the carrots and cucumber. (stop when you get to the cucumber seeds).
- Halve the cherry tomatoes and mix everything together in a bowl.
- Mix together the dressing ingredients until the honey is dissolved and pour over the salad right before serving. Mix well and scatter with the seeds.
