Marmalade Pork Tenderloin

Serves: 3-4
  • 1 Pork Tenderloin
  • 1 heaped tablespoon marmalade
  • 2 - 4 garlic cloves, crushed
  • 2 spring onions, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon each salt and pepper
  1. Combine all the marinade ingredients and place in a bowl or large plastic bag with the pork. Marinade overnight if possible, or for at least 30 minutes if short on time.
  2. Heat a BBQ grill to medium and place the pork on the grill. Turn occasionally, making sure not to burn. Should cook through in 10-15 minutes.
