Maple Ranch Jalepeno Slaw

This coleslaw recipe is the best! And what's better is that you probably have everything you need to make the dressing right in your fridge. This coleslaw is very crunchy and fresh, a little sweet, a little spicy and a little creamy.
Serves: 4
  • 1 bag coleslaw mix
  • 2 spring onion, chopped
  • ½ apple, cut into fine matchsticks
  • 2 Tbsp cilantro, chopped
  • 1 Tbsp Maple Syrup
  • ¼ cup Ranch dressing
  • 1 Tbsp Greek yogurt
  • 2 Tbsp pickled jalapeƱos, chopped
  • ½ tsp fennel seed
  • 1 tsp salt
  • ½ tsp freshly cracked pepper
  1. In a large mixing bowl, mix together the coleslaw mix, spring onion and cilantro (coriander).
  2. Pour over the dressing, yogurt, jalepenos, salt, fennel and pepper. Mix well to combine.
  3. Chop the apple into very thin matchsticks and stir through. Top with extra jalepenos and cilantro.
To make your own coleslaw mix: finely chop or slice ½ head cabbage, 1 large carrot and one small red onion
