This salmon dish is healthy and looks so elegant on the plate. It is so quick and easy to prepare so could easily pass for either an elegant mid week meal or for a dinner party. This would be the perfect mother’s day lunch dish. I served this with long-stem broccoli and parmesan roasted new potatoes.
