This chicken is always raved about, whether served to friends or family. These ingredients pack so much umami punch that its impossible not to be delicious! The chicken, filled with creamy cheese, herbs and sun-dried tomatoes remains juicy and tender, while the prosciutto holds it all together while crisping up to perfection.
I’ve just come back to Sydney from a trip to America visiting my family. I wrote this post and took the pictures a few months ago, but made this again last night for our family meal even through a haze of jet lag. I didn’t have the exact filling ingredients, or even any prosciutto or bacon to wrap it in, but it was still really delicious and roasted in the oven very quickly. I never follow a recipe exactly- even my own!
This can also be prepared in advance, making it easy and fast to get dinner on the table after work.
