Oh yeah, baby! There are few things as pleasurable in this world than eating BBQ pork ribs. Soft and tender, falling off the bone and glazed with a great homemade sauce. Easy oven ribs at that. Need I say anything more.
Ribs are actually something I like to feed my kids. Even the baby with no teeth! They are actually the perfect food for little hands and gums because they come with a natural handle, are soft and fall apart easily. Kids love the sweet and tangy sauce, as long as it doesn’t have too much heat from chili.
These ribs are very easy to make in the oven. Ribs do not take that long to slow cook, unlike pulled pork or beef brisket, which could take from 8-12 hours, ribs can be finished in 3 hours yet still have that melting, pulled consistency that we go crazy for! Its important to use a low temperature, as that makes the meat fibres relax and soften. Heat up too fast too soon, and they seize up. When slow-cooking in the oven, I go for 225f/110c. This allows the meat to heat up gradually and keep the right internal temperature for breaking down collagen, which makes the meat moist and pull apart.
The first time I tried ribs, I actually just went to barbecue them without pre-cooking. I just thought that was the way to do it. I remember my poor grandma took one bite and nearly lost her dentures! We ended up throwing the meat into a pot of water to braise for another hour until they softened up.
The next time I tried to make ribs, I was prepared to cook them for a long time. I had always heard of people slow cooking joints of meat for 12 hours so I decided to try it overnight. Another lesson learned, I now realise its the thickness of the meat that requires the long time. Rib meat is actually quite thin. Luckily, I did check on these ribs after 3 hours and low and behold: they were perfectly tender, juicy and had the pulled texture.
I’ve since made these ribs many times and the 3 – 4 hour mark does the trick. The other must is a good dry rub, which creates a ‘bark’ on the top and slightly absorbs into the meat as it cooks. See this post for more tips about making great BBQ style meats at home.

Here is your recipe for Easy Oven Ribs:
- 4 sides of baby back pork ribs
- For the rub:
- ¼ cup brown sugar
- 1 tablespoon salt
- 1 tablespoon paprika
- 1 tablespoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- ½ teaspoon chili pepper
- BBQ sauce, to serve
- Mix the rub ingredients together in a bowl.
- Rub all over the ribs and set aside to marinate for half an hour.
- Heat oven to 225f/110c.
- Place the ribs meat side down on a baking tray and cover tightly with a double layer of foil.
- Bake in the oven for 3 hours.
- Take out, remove the foil and turn oven up to 375f/200c. Baste liberally with your favourite sauce.
- Return to the oven for 15 more minutes to glaze the sauce.
