These sausage and cheese mini muffins are so easy to make. The only problem is that it is very hard to eat only one! Packed with flavoursome crumbled sausage and grated cheese.
I have to give credit to these sausage muffins to my step mom, Kay. She loves to cook and everything she makes is always delicious. She made these for us when we were in Kentucky recently. My three year old Oscar couldn’t get enough! They came in very handy when we had to leave early for the airport as we packed them in a little ziplock bag for the journey.
Back in Sydney, we were invited to one of Oscar’s friend’s 4th birthday party at Tamarama Beach over the weekend. I called Kay to give me the recipe because I thought it would be nice to bring along a savoury snack. I was happy to see the tray was totally empty when I went to collect it at the end! I did notice that these muffins seemed to go down very well with all of the parents at the party.
You gotta love recipes that are so easy to pull together. I found these to be very easy to make. The sausage and cheese mixture in these muffins keeps them moist and delicious. - 500g/12oz sausage meat*
- 1 cup Bisquick*
- 2 cups shredded cheese
- 4 eggs
- Brown the sausage meat in a frying pan. Use a fork to break up the clumps as the meat browns. Drain on a paper towel and allow to cool before mixing in the other ingredients.
- Place the browned sausage into a mixing bowl and add the other ingredients. Mix well.
- Spoon into mini muffin trays and bake at 350/180C for 12-15 minutes. Makes about 30 mini muffins.
2. Bisquick is an American product. Its also very easy to replicate, as I did. For one cup of Bisquick, use 1 cup of plain flour, 1.5 tsp baking powder, ½ tsp salt, and 2½ Tbsp melted butter.
