These juicy grilled pork burgers with aromatic lemongrass go alongside a spicy slaw of fennel, strips of zucchini, carrot and apple. The spiciness comes from a little siracha hot sauce in the dressing, which is otherwise made a little lighter using half yogurt and half mayonnaise with a squeeze of lime. Refreshing!
This burger and slaw combo is so tasty! I just had to put them together in one post, because they compliment each other so well. I tried making these burgers with chopped kaffir lime one day. I realised I was out of lemongrass and we are lucky enough to have a kaffir lime tree in our back yard. Wow – they are really good, too! Actually lemongrass and kaffir lime have a similar effect: a bright, perfume like effect that is just mesmerising. Both of these flavours are common in Thai cooking, and I’m addicted!
I’ve started making lots of burgers with flavourings like these. I like to use ground chicken or pork or sometimes lamb. It makes a nice change from the plain old beef burger and is lighter, too. Since moving from London to Sydney, I crave more foods like this. Along with the extra sunshine, eating lighter has been another refreshing change. I’ve yet to notice too much of a difference on the waistline though, and perhaps that’s an indication that I’m eating a lot of it!
To make the burgers I chopped 1 stalk of lemongrass finely, 2 cloves of garlic and 1 green onion. Use only the base of the lemongrass, not the top parts which can be dry and woody. I always add a splash or two of Worcestershire sauce to all my burgers. It just has a great savoury quality that adds a little depth. They are cooked on the BBQ for about 10 minutes, until just cooked through.
To make the slaw, use a vegetable peeler to make long ribbons from 1 zucchini and 1 carrot. Use a mandolin or knife to slice the apple and fennel as thinly as possible. I think this salad looks so pretty with the long ribbons and green coriander leaves. And I like to leave the thin apple slices whole, so that you can see what they are. It looks as refreshing as it tastes.

Here is your recipe for Lemongrass Pork Burgers with Spicy Slaw:
- 500g/15oz ground pork
- 1 stick of lemon grass
- 2 cloves of garlic
- 2 spring onion
- 1 tsp salt
- dash Worcester sauce
- 1 bulb fennel
- 1 green apple
- 1 carrot
- 1 zucchini
- ½ bunch coriander (cilantro), chopped
- 1 tbsp yogurt
- 1 tbsp mayonaisse
- 1 tsp maple syrup
- 1 tsp siracha hot sauce
- Make the burgers: Finely chop the lemon grass, garlic, spring onion and mix with the pork. Add the worcester sauce and 1 tsp salt and pepper. Mix well by hand, then form into 4 burgers and set aside to firm up in the fridge.
- For the slaw: Use a vegetable peeler to make long ribbons of carrot and zucchini. Place into a bowl.
- Using a mandolin or sharp knife, finely slice the apple and fennel bulbs.
- Make a dressing with the mayo, yogurt maple syrup and a big squeeze of lime juice. Mix well and scatter over the coriander.
- Cook the burgers for around 10 minutes on a hot BBQ grill.
