This coleslaw recipe is the best! And what’s better is that you probably have everything you need to make the dressing right in your fridge. This coleslaw is very crunchy and fresh, a little sweet, a little spicy and a little creamy.
Coleslaw – what is it about this magical accompaniment? It seems to have a heavier weight with men, I’ve observed. They go weak in the knees for coleslaw! Usually on the side of a big hunk of ham or something like that.
I always like to keep these kind of creamy side dishes on the healthier side by mixing mayo with yoghurt – I actually prefer the taste of that, too. In this case, the slaw has Ranch dressing as opposed to mayo. If you want to make your own, check out my easy recipe here! Otherwise use a good store bought Ranch. Or if you don’t have that, any creamy dressing of choice. If you are on my site, please don’t intend on following recipes to the exact letter! It’s not that kind of place – you can chop and change ingredients here as you see fit. That is the only way I cook.
I’ve included some green apple slices, cut into matchsticks to give a little extra sweetness and a nice texture. I think 1/4 to 1/2 of an apple is perfect – not enough to be over-poweringly sweet. If you are a mother of little ones like me, I’m sure you have half eaten apples lying around all the time to use!
I can’t get enough of jalapeños, Sriracha, Tobasco – I love hot stuff! In fact, I’m sitting here munching on some jalapeños straight out of the jar right now as I type. Everyone is currently asleep here in my house for naptime (that includes husband, 4 yr old and baby), so I can spend some time updating my blog and other projects. Nap time is me time!

Here is your Coleslaw Recipe:
- 1 bag coleslaw mix
- 2 spring onion, chopped
- ½ apple, cut into fine matchsticks
- 2 Tbsp cilantro, chopped
- 1 Tbsp Maple Syrup
- ¼ cup Ranch dressing
- 1 Tbsp Greek yogurt
- 2 Tbsp pickled jalapeños, chopped
- ½ tsp fennel seed
- 1 tsp salt
- ½ tsp freshly cracked pepper
- In a large mixing bowl, mix together the coleslaw mix, spring onion and cilantro (coriander).
- Pour over the dressing, yogurt, jalepenos, salt, fennel and pepper. Mix well to combine.
- Chop the apple into very thin matchsticks and stir through. Top with extra jalepenos and cilantro.
